Ingredients

– 500g (1 lb) softened cream cheese

– 1/3 cup sour cream (or yogurt or mayonnaise as alternatives)

– 1/2 teaspoon thyme

– 1/2 teaspoon oregano

– 1/2 teaspoon basil

– 1/2 teaspoon rosemary

– 1/2 teaspoon black pepper (or 1 teaspoon Italian seasoning)

– 1 teaspoon garlic powder

– 1 teaspoon salt

– 1 teaspoon red pepper or chili flakes (adjusted to taste)

– 2 cups freshly grated cheddar (or another cheese such as Swiss, Gruyere, pepper jack, Emmenthal, or Asiago)

– 280g (9 oz) finely chopped roasted peppers

– 180g (6 oz) finely chopped salami (hot preferred, optional for vegetarian version)

– 3/4 cup finely chopped green olives

– 1/3 cup finely minced green onion (about 3 to 4 stalks)

– 220g (7 oz) roughly chopped sun-dried tomato strips with oil (for topping)

– 1/4 cup finely chopped parsley or chives (for garnish)

– Rosemary sprigs (for garnish)


Instructions

1-First, combine the base in a bowl. Mix 500g softened cream cheese with 1/3 cup sour cream until smooth, then add the herbs and spices: 1/2 teaspoon each of thyme, oregano, basil, and rosemary, plus 1/2 teaspoon black pepper or 1 teaspoon Italian seasoning, and 1 teaspoon each of garlic powder, salt, and red pepper flakes. Stir well to blend those tasty elements.

2-Next, fold in the goodies. Add 2 cups freshly grated cheddar and mix in 280g finely chopped roasted peppers, 180g finely chopped salami, 3/4 cup finely chopped green olives, and 1/3 cup minced green onion. Press this mixture evenly into an oiled loaf pan lined with cling wrap, then cover and chill for at least 4 hours.

3-Before serving, turn it out onto a platter and top with 220g chopped sun-dried tomatoes and their oil. Garnish with 1/4 cup chopped parsley or chives and rosemary sprigs. Wow your guests by serving it with crackers it’s best at room temperature for easy scooping.
