2-Next, pulse the 1 and 3/4 cups granulated sugar in a food processor until it’s fine and powdery, then set aside 1 cup for later use.

3-In the food processor, add the 1 cup plus 2 tablespoons cake flour and 1/4 teaspoon salt, pulsing until aerated and light.

4-In a separate large bowl, whip the 12 large egg whites with 1 and 1/2 teaspoons cream of tartar on medium-low speed until foamy.

5-Gradually add the reserved sugar on medium-high speed until soft peaks form, then mix in the 1 and 1/2 teaspoons pure vanilla extract until just combined.
