Ingredients

– 2 raw boneless skinless chicken breasts

– 1 tablespoon butter

– 1/4 teaspoon salt

– 1/8 teaspoon pepper

– 1/2 cup pineapple juice

– 1/4 cup brown sugar

– 1/4 cup low-sodium soy sauce

– 1 clove garlic, minced (about 1 teaspoon)

– 1/8 teaspoon ground ginger or 1 teaspoon freshly grated ginger

– 2 teaspoons cornstarch

– 2 teaspoons water

– Chunks of fresh or canned pineapple (drained)


Instructions

1-Preheat the air fryer to 380°F (193°C). Melt the butter and mix it with salt and pepper, then coat the chicken breasts thoroughly on both sides.

2-Place the chicken in the air fryer and cook for 10-15 minutes, flipping halfway through. The chicken should reach an internal temperature of 165°F (74°C).

3-After cooking, let the chicken rest for at least 5 minutes to keep it juicy.

4-Meanwhile, prepare the pineapple sauce by combining pineapple juice, brown sugar, soy sauce, minced garlic, and ginger in a small saucepan. Simmer for 5 minutes, stirring occasionally.

5-In a separate bowl, mix cornstarch and water to form a slurry, then add it to the sauce. Continue simmering and stirring for one more minute before removing from heat.

6-Slice the rested chicken into long strips and coat fully with the pineapple sauce or serve the sauce poured over the chicken. Optionally, add pineapple chunks to the dish.

7-Serve alongside rice, vegetables, or your preferred side dishes for a complete meal.
